Ingredients:
Beef:
32oz 96% ground beef
3 Tbsp gochujang
3 Tbsp soy sauce
2 Tbsp sugar free ketchup
1 Tbsp garlic powder
1 Tbsp rice wine vinegar
Salt and pepper to taste
Green onion whites
Spicy Mayo:
1/4 cup light mayo
2 Tbsp gochujang
1 Tbsp sriracha
2 tsp yuzu ponzu
2 tsp sesame oil
Additional:
3 Tbsp honey
1 Tbsp sesame oil
1 cup water
Pinch of salt
Green onions
5 packs of Momofuku Sweet and Spicy Noodles
Instructions:
Cook the ground beef, gochujang, soy sauce, ketchup, garlic powder, rice wine vinegar, salt, pepper, and green onion whites in the slow cooker. Mix well until covered, and cook on low for 3-4 hours.
Mix together the light mayo, gochujang, sriracha, yuzu ponzu, and sesame oil to make the spicy mayo.
Cook noodles according to package. Drain and set to side.
Once the beef is done cooking, add the cooked noodles, water, honey, sesame oil, Momofuku flavor packets and a pinch of salt. Stir until coated and cook for additional 10-15 minutes. Top with a drizzle of spicy mayo and chopped green onion tops.
